Food Friday on Empty Streets: Fried Tofu in Peanut Sauce

Growing up my mom would make several tofu recipes during the rainy season to keep us nice and warm. Today I would like to feature one of my favorite tofu recipes that I myself had learned to cook just recently :)

Ingredients

* peanut sauce
* 2 tablespoons peanut oil
* 1/2 cup onion, finely chopped
* 2 cloves garlic, minced
* 1 tablespoon crushed red pepper flakes
* 1 teaspoon ground cumin
* 4 tablespoons lime juice
* 1/2 cup soy sauce
* 1 cup peanut butter (smooth or chunky)
* 1/3 cup unsweetened coconut milk
* fried tofu
* 2 pounds tofu, extra firm, cut into 1/2 inch chunks
* 4 tablespoons peanut oil
* 4 cloves garlic, minced


Directions

1. for sauce
2. In a small saucepan heat oil to medium high. Add onion, garlic, red pepper flakes, and cumin. Cook until onion and garlic are fragrant, but not brown, about 10 minutes.
3. Stir in lime juice and soy sauce.
4. Gradually stir in peanut butter and then coconut milk until smooth. Cook, stirring, until hot, about 5 minutes.

6. Add the peanut oil and garlic to a large frying pan. Heat to medium high and add the tofu. Fry until dark brown.
7. Cook the rice.
8. Serve the peanut sauce over the fried tofu and rice.
